THE STORY BEHIND THE ROOSTER
In mythology, the rooster is a symbol of courage, pride, and honesty – all key elements of our personal commitment. The rooster is believed to protect our homes, reflect positive energy,
and promise good fortune.
Roosters are also widely used in the Mediterranean as an honorary culinary symbol, such as the legendary Black Rooster sealing each bottle of our beloved Chianti Classico. Don’t forget, that the most joyful evenings start with a cocktail.
It might have been destiny or pure coincidence that it was in the Year of the Rooster when we took over the property, but we deliberately chose a weathercock indicating the year 2017 for
our roof-top decor.
To sum up, our rooster blends the rural heritage of our centuries-old Countryhouse with our warm hospitality and culinary lifestyle.

The Bosoni family, also known as the Maestri of Vermentino, has written their own manifesto on how to listen to nature, act sustainably, and express the unique terroir of Colli di Luni.

Donnafugata is Italian for “the lady who escaped”, but we haven't wanted to let her go since that special encounter. This extraordinary lunch at the beach marked the beginning of our pleasurable companionship with the wines of the Rallo family. Today, we have chosen Anthìlia Cattarato, a cornerstone of the celebrated winery, as our Country(house) white wine.
Every wine lover has their own story to tell. According to a famous legend the escaping Sicilian queen once found shelter in the hills of Entelina, where the Rallo keep their high-altitude vineyards today. A look at Donnafugata’s iconic labels tells you what matters the most to the family estates: authenticity and sustainability, a love for details and a commitment to art, Sicilian heritage and a family in which women always have played a major role.

The stars we have chosen from the Swedish Islander are the serious single malt Tycho Brahe, Hvenus made with island-grown rye for our Øresund Negroni, and the blended whisky Old Hare, one of Michael’s personal favorites that he recommends sipping while relaxing in a hammock on our hare hillock, where you might even spot a rabbit in the open fields.

Podere Grattamacco is a magnificent estate on top of a hill amidst forests and sea breezes. “Less technology, more terroir” — the second oldest winery of Bolgheri is a true pioneer with an unconventional approach: Organic farming matters. White clay matters. Altitude matters. Sangiovese matters.
Here, under the century-old oak tree of Grattamacco, the legendary photo of the five founding members of what would become one of the world’s most prestigious wine zones was taken.

Let’s take it from the top. Before the wine boom, Bolgheri was known for its lush country life by the sea, reminding us of Bjäre Peninsula. To escape the busy city well-situated families kept their country homes, yachts, and riding horses here. The noble families' ambition to grow Bordeaux-style wines on their estate brought Michele here, as they were looking for a vinicultural expert to supervise the pioneering work in the vineyards.
“I was in the right place at the right time” Michele explained to us. However, his pioneer spirit, lots of courage, and hard work enabled him to slowly build up his very own 23 ha family winery on the side, which he successfully handed over to his son Giacomo in 2019.
Satta stands for what Bolgheri is all about: fantastic wines, unique terroir, innovative thinking, and the freedom of defining your own rules. We keep falling in love with the family´s wines. Whether white, red, or even sparkling, we don’t make the wines, but gladly receive them!

A bottle of spirits from Egentliga finland, Finland proper, is without a doubt filled with all the stereotypes we love about our neighbors on the other side of the Baltic Sea. Their enthusiasm for rye. Their obsession with sauna. Their sincerity. Their wonderfully bizarre ideas. It goes without saying that it was at a nearly sweaty 100o when Mikko, Jouni, Miika, Miko, and Kalle were sharing and a bottle of whisky and pondered why anyone hadn’t thought of turning the beloved Finnish rye into spirits yet. Many crazy ideas might be born in the sauna, but the dream of starting their own distillery still felt right on that next hazy morning back in 2012, so they founded the all-rye distillery in the village of Isokyrö on the banks of the river Kyrö.
Klockon slår, nu ere dags! We believe there has never been a better time to enrich our Malt Library with a 100% Finnish Rye whisky than in the year all of Europe went crazy for that catchy sauna song, although nobody ever seems to wonder how it came about that a Finnish trio represented Sweden in Switzerland.

In the beginning, the rural identity of the Perrin Family´s easy-drinking Chicken wine made it the perfect serve in our centuries-old Countryhouse. To further enhance your wine experience at our little connoisseur hotel, we have decided to upscale our house wines. Au revoir La Vieille Ferme! We´ll meet again!
Curious about Primum Familiae Vini? On our wine list you will find other prestigious members: Antinori and it crus extending back 26 generations, Tenuta San Guido with its iconic star Sassicaia, Pol Roger´s excellent Champagne, as well as Symington´s Graham´s Port, which is the perfect pairing with our cheese platter.

However, the huntsman’s trust in nature´s balance and the need to conserve biodiversity have played an important role in the family’s respectful farming to create pure and precise wines, reflecting the unique terroir of Castelnuovo Berardegna UGA.
A place in touch with nature, repurposed horse stables, a belief in terroir, and a love for Sangiovese –we share all of these with Fattoria Félsina. Owner Giovanni Poggiali already trusts in the talent and passion of the next generation, which is why he asked his 13-year-old daughter Rachele to draw us a Fèlsina rooster.

The core range is a wonderful tribute to the UNESCO World Heritage Site Höga Kusten [High Coast, swed.] origins and its local timberwork heritage. If you ask Michael for his favorite, he will probably serve you Hav [sea, swed.], a whisky with a spicy, salty character and light peat smoke. But remember that taste always depends on both one's mood and the weather.
